Brewer's Notes:  It’s that time of year, and we are back baby! Racing the van all the way back from Yakima with Centennial from Roy Farms. Centennial is the timeless hop that I (brewer Aaron) remember picking off the bine way back in 2010. This hop sings to you when you know when to pick it. Which is after you've let it develop. Roy Farms grows some of the best Centennial in the world, and they know when to pick it.

Call this an anthem for classic hop lovers. Iconic flavors with more defined vibrant modern notes we crave. Bright lemon, apricot and golden raisin notes transcend into that secret stash that you hid in your sock drawer in high school. Just enough dankness to bring a beautiful depth to this beer. It finishes dry and strong. As it warms, its playful aromatics start coming into the fold. The top-shelf German malt used carries this beer, allowing us to hop it without it getting too full-bodied, too sweet, or incompatible with hopping the sh*t out of it.

Restraint should be shown when you make one of the most iconic beer styles in the world that’s also arguably the hardest to make. It’s a love anthem for pilsner. And it's a tribute to fresh hops.
