This lager was hopped in the kettle with a Slovenian hops, and the grain bill consisted of authentic Italian pilsner malt grown by the Adriatic Sea. It was then dry hopped multiple times throughout fermentation with Self Care's highest hopping rate to date, with a new experimental German variety called Relax. Relax has been used primarily in the tea industry on a small scale, and recently became available to Aaron to try. He chose this hop because it would infuse hop flavor and delicate aromatics, yet it contains none of the oil that traditionally would cause bitterness when boiled. A mission to make some of the hops from my earlier brewing career sing. Palisade hops out of Yakima were used frequently in a delightful session IPA at a brewery I worked for years ago, and I thought it would also be quite lovely in this Self Care iteration. Using local base malts that were grown and malted in Washington State, we worked in some Munich and Oats, which made for a great combination in many of the pales ales that I've been inspired by. The supporting hops in this beer are Amarillo and Galena. We did a smaller volume of hops in the whirlpool in addition to a small pellet dry hop addition to balance the bitterness of the kettle hops. To take it deeper into german authenticity, the kettle and mash were boosted with the premium sour wort. This malt made acidification is a mandatory addition and rheinheitsgebot in Germany. What does all this mumbling mean? It mean’s we’re trying to make an honest voyage into NA Kolsch. We’re not some rich fat cats trying to catch the eyes of private equity firms, or doing it because it’ll fill out the interests section on our LinkedIn account. We just want to make the most authentic tasting non-alcoholic versions of beer that we can. Well they were a red-hot trend in IPA a couple years ago. They took off like a rocket ship. Everyone was making them. It's a weird translation to the NA world, but Bruts were really dry and light. The IPA's were being flipped on their head and using corn and\/or rice to keep them as low in body as they could be. I choose to use some Corn in this rendition. It is ripping dry, not seltzer dry, but darn do these hops come out swinging. The Brut trend in beer sorta stalled out because everyone ending up making them. There's a few less players here in both Beer and NA camps. So we plan on wiggling around in this style a little and seeing what magic we can come up with after this one. We wanted some punchy hop character and we figured we should throw in some CTZ hop in the oil boil as a bittering addition. Just the one can though, we aren’t cray-cray. Essentially, they take pellets and send them for a a swim in the deep end of liquid CO2 inside a tank. Leafy hop material you don’t want is vented and extracted out, resulting in some crazy, sticky hop oil that we have to toss in our kettle. We think you need some pellets though hot side and with dry hopping. Then, Chinook was feathered into the whirlpool and dry hop. Hop oil was added into the fermenter and bright tank before packaging. A lot more hops.\u003cbr\u003e\u003cbr\u003eSo, in our never-ending journey to bring you the most convincing non-alcoholic beer you’ve ever tried, brewer Aaron has innovated yet again, coming up with a methodology to create the body and hop profile you’d expect in a double IPA. All while still brewing the beer to an ultra-low ABV (rather than brewing a regular double IPA and then dealcaholizing it, which would destroy all those nuanced hop aromatics that really make our IPAs pop).\u003cbr\u003e\u003cbr\u003eSo, one could say that we “doubled down” on this beer in more ways than one, because the mouthfeel is so soft and pillowy that you’ll want to straight up lay down on it and take a nap. This historic grain helps to give body and wheat like flavors, with the added benefit of being softer on those that have reactions to wheat. We then sprinkled in just a pinch of Munich malt because, well, \"everybody else is doing it, so why can't we?\". And just like that, a softer colored nuanced malt bill was born. But when in Rome (or Washington--you get the point).  \u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003eAnyway, on the heels of our fantastic Bohemian Brew release, Aaron had a vision of using sparce amounts Saaz again to keep it anchored in tradition. Some process-driven hop farms are producing a hop-filtered product essentially--they take pellets (Saaz in this instance), force them into a tank with often liquid co2, temperature and pressure and lessen the leafy matter load and refine bitterness and quantity needed. Saaz being an old world noble hop doesn’t have a lot of bittering potential in its oil composition. Aaron wanted the flavor but just some top notes, and this allows the use of less, but enables getting more flavor out of them. We were about to put One hundred and Forty pounds of whole leaf Centennial hops into the brewhouse, so we thought we could cut back on some extra leaf material from hop pellets. \u003cbr data-mce-fragment=\"1\"\u003e\u003cbr data-mce-fragment=\"1\"\u003eEverything else in the process was hinged upon what will make fantastic Pilsner. Knowing it would be enjoyable no matter what, it just needed to jump out at us and say \"This is a pilsner, its different from our fresh hop IPA's.\" We used a blend of two malts from Skagit Valley Malting, offering a little more nuance than just using a single malt. With of course a small specifically German malt addition done in faint quantity for specialty. Everything just sort of has to come together and feel balanced to let some hops pop just right. The hop profile has hints of savory characters playing with the underlying minerality of the sculpted brewing water. Aaron describes this as soft fruits like nectarines but also a faint orange mint character. Using Oregon-grown Centennial from Crosby Hop Farm was very intentional. They tend to have such a clean flavor profile, and we were hoping to keep the hop flavors from feeling too angular. \u003cbr data-mce-fragment=\"1\"\u003e\u003cbr data-mce-fragment=\"1\"\u003eFresh hops are already a feat of rarity in the beer production space. Anything brave enough to not be an IPA is rewarded by the long-time industry fans, production employees and bar staff. The photo the can art is based on, though, helped get us there. So where to start? Well, in classic hefeweizen, an accepted yeast flavor bubble gum. A lot of this comes from flavor the yeast can create using wheat and ferulic acid made during the mashing process, transforming during fermentation to free up other compounds (nerd alert, right??!!!). We also didn’t want that clove flavor, or to use a weisse yeast. Still, why should you take this remotely seriously? I mean, where the heck else has pink bubblegum been experienced in beer? Three Floyds Gumball Head beer. I’ve spent years trying to riff on this beer every so often. It just seems largely impossible to create what they did. Early releases of that beer ten years ago essentially had a supporting role of pink bubblegum woven in, with a balanced bitterness and smooth wheat profile. I’d put it as a game-changer beer for me in seeing how simply masterful brewers can be with pale beer. \u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e(\u003cem\u003eProgramming note:\u003c\/em\u003e \u003cem\u003ethe head brewer continues pontificating, read on if you must or have nothing else of importance to attend to.)\u003c\/em\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan\u003eSo, to approach a tribute to this, I picked a really clean pilsner malt (This would probably make this German maltster cringe). To balance out the wheat, I ran a 50\/50 split with the fancy spelt malt. It almost has a smoother and more playful floral character than malted wheat. The beer was bittered with the new French variety Mistral. It produces a lot of floral and sweet soft fruit notes, and pairs well with light beers or fruity lagers. To keep it exciting, we did a dose of Mistral in the whirlpool with some Mosaic Incognito hop oil. \u003c\/span\u003e\u003cbr\u003e\u003cbr\u003e\u003cspan\u003eWe then fermented out, withheld a dry hop and instead dosed in Pink Bubble gum natural flavors, and of course edible glitter. Just glittered the living crap out of it. That wasn’t enough for Nate, so we glittered it again. Nate still said that wasn’t enough, so we told him we glittered it a third time. We didn’t though, it's a difficult process all done for the fun of it.  We promise you're not drinking bougie hand soap. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp data-mce-fragment=\"1\"\u003e\u003cspan\u003eBeer can be fun and indulgent and make a difference for an organization like SMASH; it shouldn’t all be silly nonsense though. It should have some backbone behind it that keeps it rooted in beer flavors. Our marketing guy Tim kept saying, \"But this can't suck. If not, try it anyways!\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eBrewer’s notes:\u003c\/strong\u003e So aside from wanting to do something different for dark beer season, here’s the origin story: One day early this fall, Nate and Aaron went for a walk to brainstorm and popped into one of our local coffee haunts. Aaron ordered a dirty chai latte, which Nate wasn’t familiar with. (It’s a chai latte with a couple shots added.) Coincidentally, this walk happened the same week that discussions were happening around planning our winter canning runs. There is a lot of dark beer that exists today with adjuncts added. We released a coffee dark last year and enjoyed it but thought we would come back in a different flavor profile. Push our limits a bit. Generally, spiced beers are somewhat synonymous with pumpkin beers or saisons. One initial challenge brewing with tea is that black tea used in chai contains tannins, which can cause astringency in beer. Brewers avoid this by steeping tea in alcohol and adding the alcohol afterwards to the conditioning tank, so that’s out. Well, we can’t do that—this is non-alcoholic beer. Rooibos tea, however, does not contain tannins, so we blended this tea together with all the lovely accoutrements in spiced chai. Huge pillow-sized bags of steeped spices went into our whirlpool after boiling, to saturate those warming chai flavors. \u003cbr\u003e\u003cbr\u003eLet’s see, what else?? We know that lactose intolerance sucks so, we threw in flaked oats for the creamy body they can provide. The thought of some lactose intolerant dark beer drinker out there pounding the table with their fists because every release this year sounded like a chocolate milkshake—well, we wanted something for that customer, too. What about those that don’t do coffee? Coffee flavor is substituted within all the dark malts used to give a blonde coffee roast-esque (not a word, we realize) flavor profile without loading in even more caffeine. So, you can drink more of this at night, but it does still have tea, so that counts for something in the caffeine department. Likely the best aroma we’ve ever had in one of our Self Care beers to date. “You mean it smells better than those crazy cool fresh hops you did?” Yes, we are saying it does. (“We” is Aaron.) Hop flavor hides well in the background and the sweetness of the wort is highly balanced by the spices. I mean we threw 5#’s of black peppercorns alone in. With some of the biggest players in NA already offering some sorta shape-shifting clone of a full-strength version, why should we do it that way? It’s that punk ethos that makes us a handful. So, the hell with making cerveza with rules, especially those Germanic ones that shaped the original lagers of Mexico. Going against the grain here we traded out mega cheap commodity two row for Walla Walla, Washington’s finest craft malt from Mainstem Malting. Did we mention the punk band we made this for (and with), Chastity Belt, is from Walla Walla originally? We can’t skip out on adding corn and crystal malt to give a classic profile. It's also classic to use German hops in the boil\/hotside but we wanted to careful to not over bitter your expectations of a cerveza. When you only work with one hop it reminds me of a single versus an entire album (to borrow a metaphor). You can get much more intensity out of a single hop in what it can do for you. When you combine hops subtly you can use opposing and equal flavors to shape a profile even if its done gently, like some damn fine silky surf punk. \u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003e\u003cbr data-mce-fragment=\"1\"\u003e\u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003e\u003cbr data-mce-fragment=\"1\"\u003e\u003c\/span\u003e\u003cspan data-mce-fragment=\"1\"\u003eAnyway, we cooled the whirlpool down significantly so bitterness wouldn’t transfer from using two Neo Mexicanus hop varieties. Classic American hops have been found growing in the mountains of New Mexico, found growing in Mexico and crossbred and tested extensively before being released. We selected Zappa and Sabro hops, They carry a bit more bold citrus flavors than the old world hops used predominantly in Europe. Even on a reduced whirlpool hop quantity compared to our IPA’s the mango, lychee and hints of coconut pop. It’s unlike anything you’ve ever had. Like experiencing that new band to you and their album that was recommended. I’m right now recommending Chastity Belt, and the Album No Regerts (that's spelled correctly, BTW). In other words, it's not the band who will melt your face off, nor is it bubble gum pop that will erase all your worries and take you to a happy place. It’s more of a thinking person's beer - like an under-appreciated indie band that's your own little secret. One you can share with those you deem worthy of entering your head space.\u003c\/p\u003e\n\u003cp\u003eThis beer, like all great bands, has a solid yet complex rhythm section, grounded with a base of Germany’s premier malt house barley. We then built in riffs of Yakima grown hops, featuring a newer American lager hop variety, Loral.
