• 2X KÜHNHEIT - FESTBIER
Brewer's Notes: The German word kühnheit translates to "audacity" in English. And, oh, boy were we freaking audacious when brewing this beer. Big time. So much so that we bent the mold of what a Festbier should be - just a little bit - in order to make this beer special.
We started with a fully traditional festbier water profile and grain bill, but rather than use traditional German hops, we feature the hop Audacia. Exclusively grown in Oregon at Indie Hops, this hop's lineage is sehr gute (very good). The hop is bred from Hersbrucker, a timeless German lager hop, and is also a relative of Strata, which does the heavy lifting in many modern IPAs. In fact, Audacia has also become quite the popular IPA hop itself over the last few years.
With a classic orange hue and bready warmth, the depth of such a light beer is welcoming for sessionable enjoyments. And while this beer would be delicious with a salty pretzel, or a brautwurst with spicy mustard and kraut (yum yum!), you could really pair it with just about anything food wise, and it will shine.
So go out and hunt for a Bavarian beer mug at a thrift store (if you don’t already have one), and make a go of it. Beer purity laws still exist in Deutschland, so they might not let this one in due to our blasphemous hop varietal usage. So keep it stateside and enjoy it with friends.
2X FRESH PAINT - FRESH HOPPED RED ALE
Brewer's Notes: A couple of our diehard fans were over the moon when Painted Red was released. They also said "could you imagine if this had a little more hop character...kind of like a red IPA"? So we broke out the legal pad and tried to connect the dots. Everything pointed to more hops, and more hop flavor. The flow charts said, "FRESH HOP THE DAMN THING!!!!!"
To facilitate all that green, we made a couple of really small tweaks to our grain bill. You definitely need some body - but maybe a wee bit less sweetness, and more toasty character. We also wanted to pair the perfect hop for the brew, so we chose Centennial from Crosby Hops in Oregon, and used it in a fairly large fresh hop steep. We pulled it back by a third from our fresh hop IPA’s. Which if were being honest, already use more fresh hop pounds per barrel then a lot of brewers generally use.
This red drinks big and balanced. Aromatics of ruby red grapefruit and pine crawl out of the glass. The mid palate reminds you why malty beers rule with their bready warmth and complex flavors. The finish is all Centennial. I don’t wanna be too suggestive, but its got a badass watermelon candy vibe. Very low lingering sweetness. Ample bitterness.
It's just right.
"REDS ARE BACK BABY (in your best George Costanza voice)!" Get it, keep it cold, and drink it fresh. We literally can only make these fresh hopped beers one month out of the year when the hops are harvested.
2X FRESH HOPPED FREAK FLAG - HAZY IPA
Brewer's Notes: You know Freak Flag. You love it. And this year we came up with a fresh new look for this years fresh hopped Freak Flag tribute. And our goals were lofty: make an insanely hop concentrated brew that is incredibly balanced, yet complex (those two things are not mutually exclusive). Bitterness can’t linger too much, but hops should be dank and juicy. This year is simply the best fresh hop variant of Freak Flag we’ve done yet, and we made twice as much of it!
So we don’t get sidetracked further: Strata. You remember Fresh Kicks, don't you? We can't forget it. How could we? Strata worked so well in that beer, that we felt it would be the ultimate pairing for this year's Freak. So we took another trip to visit our friends at Crosby Hops.
The beer is almost savory in the nose. Sweet fruits like strawberry and peaches whisp into a slightly minty finish. I promise it will keep you coming back for more, and you will want to smell it before every sip. Its intoxicating - but it will never intoxicate you.
We are so chuffed to be able to bring you these seasonal beauties. Get it, keep it cold, and drink it fresh, for the love of god.
