This one pulls from what we learned during fresh-hop season, plus some early tests with Nuvo cryo in A Little Chilly. Everything stacked up into this big, juicy, Double Hazy NA IPA.
We hit the whirlpool with Strata, Comet, and Idaho 7 in cryo form, with bittering from Crosby Triumph. The body came out huge and creamy, balancing the bitterness without softening it. Aromatics punch right through—I pick-up peach, apricot, and that clean menthol note Strata can throw…which can seem weird, but we’ve actually seen it come up before, and it’s one of our favorite parts for depth.
Dry hop in the cellar was all Strata, and in the brite tank, all Idaho 7. Layered, focused, and loud in the right ways.
Like a lot of what we’re doing lately, this double NA builds on batches we’ve liked and refines them with methods we’re digging now. The Nuvo cryo hop format is showing real promise—we’re especially loving it since it’s all the hop flavor without the extra bite from kilning or the excess green from high hop loads. Might be something we lean into more year-round...
